The Tiramisu

Tiramisu is the most popular Italian dessert in the world. Despite its mystery-shrouded origins, a 17th-century dessert similar to tiramisu was created in Siena for the Grand Duke of Florence, Cosimo de’ Medici. Today’s tiramisu recipe was invented in the mid-1970’s by a pastry chef in a restaurant near Venice.

Why do people love tiramisu so much? Is it because of the mascarpone creaminess, or the sweet taste of eggs mixed with sugar, the slightly bitter taste of coffee, or the softness of the ladyfingers? Indeed, these are the simple ingredients of this Italian masterpiece.

Yet why is it so difficult to find an authentic Italian tiramisu in the United States? The secret is in the mascarpone. Tiramisu’s key ingredient is difficult to find in the U.S. Making a high-quality mascarpone requires a long and delicate process. This is why we have chosen to make it ourselves with a machine specially designed by an Italian cheesemaker. We use only fresh milk and cream delivered daily to our laboratories.
